No! My pancakes did not fall in the dirt!
The bugs from my garden did not invade my pancakes!
What I mean is that I put produce from my garden in my pancakes.
Yum! Or are you making a disapproving face?
Once you try it and taste it, I believe you will love it!
The garden of your body loves being fed by fresh produce. Like from this garden of mine.
My garden has taken off recently. Leafy greens are everywhere, in danger of bolting.
Here was my first course: a mess of greens. After blanching, I added butter, but that was all. What a mild taste with a bit of sweetness! Tender leaves straight from my garden are so delicious.
The squashes and pumpkins have shot up, making huge leaves. They burst out with flowers, and now these have become fruits.
The first is the zucchini.
If you love oats and apples and zucchini, then you will join me in loving these pancakes.
Mix together:
- ¾ cup oat flour
- ½ cup rolled oats
- 1 tsp. baking powder
- 1 tsp. cinnamon
Add:
- 2 eggs, whisked
- ½ cup milk of your choice
Stir in:
- 1 medium apple, grated
- 1 small or ½ large summer squash, grated
Cook in a skillet coated with a little fat on the stove over medium heat, turning to brown both sides.
